Risotto Cakes


These were MOUTH WATERING & my family LOVED them!!!! You can serve them with a side of sauce, on top of salad, on top of pasta! DELICIOUS! You just make Risotto, Chill it in fridge for an hour or so, roll into a ball & pop a square of mozzarella in the middle. Then Roll the ball in Egg, then bread crumbs (seasoned with salt/pepper, parmesan cheese) & Fry in vegetable oil. Can add some garlic infused olive oil for additional flavor also. Then drain on paper towels & serve! Mmmmm!!!! They may come out as risotto balls or cakes, any shape tastes just as good. Enjoy!
