Arugula
Macadamia nuts - chopped & toasted
1 Chopped avocado
1 chopped mango
1 tomato chopped
1/4 red onion chopped
1/2 cucumber peeled & chopped
Dressing:
1/2 cup olive oil
squeeze 1 lemon
salt/pepper
1/3 cup red wine vinegar
1 clove garlic chopped
Few squirts of agave syrup
Mix up & enjoy! Fresh, light & healthy.
